Next weekend, from June 16-17th, I will be participating in the Seed Experience Event which will focus on plant-based and vegan living. What is awesome about this event is part of the proceeds will be going to two non-profit organizations, in particular New York Coalition for Healthy School Food. On Saturday, June 16th, from 10:15 am to 11:45 am, I’ll be speaking at the workshop/panel “Planting The Seed of Veganism Through Blogging” with JL Fields (moderator), and Gena Hamshaw . My perspective will focus primarily on blogging from plant-based perspective and deciding on what you want your voice to be in that space.

Aside from the blogging workshop, there will be a host of popular speakers talking about health, wellness, and even school food. Along with lots of vendors, food sampling, a screening of “Vegucated”, workshops etc. There will be lots going on so you may need the entire weekend to take it all in. My mentor and master chocolatier and dessert diva, Chef Fran Costigan will be doing a demo on Sunday at 2pm: “Irresistible Chocolate Vegan Dessert for Everyone”. You must not miss that. Dr. Joel Fuhrman will be speaking about “Winning the War Against Cancer” on Saturday as well at 5:30. Amie Hamlin, founder of the New York Coalition for Healthy School Food, is speaking on Sunday at 4:00 pm on “Planting the Seed in Schools: Understanding How it Works and How You Can Get Involved”.     I have been a vegan for 18 years, and vegetarian for 27 years. I love all plant-based foods, in fact I am a vegan foodie! I much prefer shopping in a farmers’ market or a health food store to going into a department store, and I love to create new recipes. My favorite? Hmmm, that’s hard to say, but I guess I would go with vegan lasagna, made with spinach, zucchini, tofu and Daiya cheese (yummm!). Another favorite is grilled portobello mushrooms, with balsamic vinegar and garlic. Oh yes, and I love spirulina pasta!!! Okay, I know I was only supposed to mention one plant based food, but I couldn’t help myself…….. I love them all!

    Love kale, Brads Raw Leafy Kale Vampire Killer, or just raw in a salad with olives, red onions and a mild dressing, or sauteed in garlic and oil.

    Mache ~ lambs lettuce. Thanks to my brother, just discovered this yesterday, and Trader Joe’s carries it. It is delicious with or without dressing, hearty and green is my experience.

    Love juices made with all greens, spinach, kale, beet leaves, little bit of apple, great healthy energizer!

    I have two favorites, avocados and kale. My favorite sandwich ever is sliced avocado, spinach and provolone cheese. It’s super simple and I’m sure I could eat it almost everyday. I’m extra late jumping on the kale bandwagon but I can’t stop raving on how wonderful kale actually is. I love the versatility of it from adding it to smoothies to stir fry. One vegetable that I’m intimated by is leeks, I keep meaning to try them but somehow I always pass over them at the farmer’s market.

    My absolute favorite food is the salted seaweed or nori! My grandmother is Japanese so I grew up eating that stuff with rice. I’m glad that I can continue eating it even as a vegan!

    Just this year I have become more health concious about what I eat and curious to learning healthy new ways to prepare meals. I would like to try brussel sprouts…I’ve always had a fear of eating them :-0

    I don’t know where to start to talk about vegan foods that I love! When I first became a vegetarian years ago, all I really did was stop eating meat and use meat substitutes in its place. But, then I subscribed to Vegetarian Times and VegNews, and started learning about so many other food options. I am now a bit of a “foodie.” I have tried so many foods that I had previously never even heard of. I eat kale every day, love tempeh and start my morning with a spoonful of hemp seeds before I even eat breakfast. I never would have thought of any of those things a decade ago before changing my diet.

    Don’t worry, I know the contest is over, but I felt like I needed to share one of my favorite and easy foods to make. Last night I sauteed tempeh in olive oil and added BBQ sauce. That was it. And it was delicious. Tempeh heats up really fast, and olive oil stays hot, so I turn off the stove about half way through, and they still continue to cook. When I put the BBQ sauce on last, it will still hot enough to sizzle loudly. Barely uses any energy, easy, and super fast to make!
